  • 2 medium parsnips, peeled and cut into chunks
  • 2 celery stalks, sliced
  • 2 medium russet potatoes, peeled and cut into chunks
  • 4 cups beef broth, Whole30-compliant
  • 4 fresh thyme sprigs
  • 2 fresh rosemary sprigs
  • 2 bay leaves
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Season the lamb cubes with sea salt and black pepper.

Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat.
