Ingredients

  • 2 large Green plantains
  • 4 tablespoons Coconut oil
  • 0.5 teaspoon Sea salt
  • 2 cups Filtered water

Directions

Step 1

Peel the green plantains by cutting off the ends and making a shallow vertical slit through the skin. Gently use your fingers or a knife to remove the tough outer peel.

Slice the plantains into 1-inch thick rounds and set aside.

Step 3

Heat a large skillet over medium heat and add the coconut oil. Once the oil is hot, but not smoking, carefully add the plantain rounds in a single layer, working in batches if necessary.

Step 4

Fry the plantain rounds for about 2-3 minutes per side, or until they turn a light golden color. Remove them from the skillet and place them on a plate lined with paper towels to drain excess oil.

Step 5

Using the flat side of a plate, a tostones press, or the back of a spatula, gently flatten each fried plantain round to about 1/4 inch thick.

Step 6

Prepare a small bowl with filtered water and dissolve the sea salt in it. Dip each flattened plantain briefly into the salted water, then pat them dry with a paper towel to remove excess moisture.

Return the flattened plantains to the skillet with the hot oil and fry a second time for 2-3 minutes per side, or until they are crispy and golden brown.
