Ingredients

  • 1 cup Coconut flour
  • 1 cup Arrowroot flour
  • 2 tablespoons Tapioca flour
  • 0.5 teaspoon Salt
  • 0.75 cup Coconut milk (full-fat, canned)
  • 0.5 cup Warm water
  • 2 large Eggs
  • 1 teaspoon Olive oil

Directions

Step 1

In a large mixing bowl, whisk together the coconut flour, arrowroot flour, tapioca flour, and salt until well combined.

Step 2

In a separate bowl, whisk the eggs until frothy. Add the coconut milk, warm water, and olive oil, then whisk until smooth.

Step 3

Pour the wet ingredients into the dry ingredients and mix thoroughly until a smooth, pliable dough forms. The dough should feel soft but not sticky. If it seems too wet, add a little more arrowroot flour, 1 tablespoon at a time.

Step 4

Divide the dough into 6 equal portions and roll each into a ball.

Step 5

Lay a piece of parchment paper on a clean surface and sprinkle it lightly with arrowroot flour. Place one dough ball on the parchment, then place another piece of parchment paper on top. Use a rolling pin to roll the dough into a thin, round tortilla, about 6 inches in diameter. Repeat with the remaining dough balls.

Step 6

Heat a large, non-stick skillet or griddle over medium heat. Once hot, place one tortilla into the skillet and cook for about 1-2 minutes, or until bubbles form and the underside is golden brown. Flip the tortilla and cook the other side for an additional 1-2 minutes. Remove from the skillet and set aside on a plate lined with a clean kitchen towel to keep warm.

Step 7

Repeat the cooking process with the remaining tortillas, stacking them on the plate as they finish cooking.

Step 8

Serve warm and enjoy as a wrap, taco shell, or side dish to complement your Whole30 meals.
