Ingredients

  • 2 pounds Ground beef (grass-fed preferred)
  • 1 large Yellow onion, diced
  • 4 Garlic cloves, minced
  • 1 medium Green bell pepper, diced
  • 28 ounces Fire-roasted diced tomatoes (no added sugar)
  • 6 ounces Tomato paste (compliant, no added sugar)
  • 1.5 cups Beef bone broth
  • 3 tablespoons Chili powder
  • 1 tablespoon Smoked paprika
  • 2 teaspoons Ground cumin
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Cayenne pepper (or to taste)
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper
  • 0.25 cup Fresh cilantro, chopped (optional, for garnish)
  • 0.25 cup Sliced green onions (optional, for garnish)
  • 1 medium Avocado, diced (optional, for garnish)

Directions

Step 1

Heat a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the ground beef, breaking it up with a wooden spoon, and cook until browned, about 5-7 minutes. Drain excess fat if necessary.

Step 2

Add the diced onion, garlic, and green bell pepper to the pot with the beef. Sauté for 5-8 minutes, or until the vegetables have softened.

Step 3

Stir in the chili powder, smoked paprika, ground cumin, oregano, cayenne pepper, salt, and black pepper. Toast the spices for 1-2 minutes to bring out their flavors.

Step 4

Add the fire-roasted tomatoes, tomato paste, and beef bone broth. Stir well to combine all ingredients.

Step 5

Bring the chili to a gentle boil, then reduce the heat to low. Cover the pot and simmer for 45 minutes, stirring occasionally to prevent sticking.

Step 6

After 45 minutes, uncover the pot and let the chili simmer for another 10-15 minutes to thicken slightly, if desired.

Step 7

Taste the chili and adjust seasonings if needed.

Step 8

Serve hot in bowls, garnished with fresh cilantro, green onions, and diced avocado if desired.
