  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 medium Shallot, finely minced
  • 2 cloves Garlic cloves, minced
  • 1 cup Chicken broth (unsalted, Whole30-compliant)
  • 0.5 cup Coconut milk (full fat)
  • 2 tablespoons Fresh tarragon leaves, chopped
  • 1 tablespoon Fresh lemon juice
  • 1 teaspoon Arrowroot powder
  • 1 tablespoon Cold water

Directions

Step 1

Season both sides of the chicken breasts with sea salt and black pepper.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and sear for 4-5 minutes on each side, or until golden brown and almost cooked through. Remove the chicken from the skillet and set aside.
