Ingredients

  • 2 large sweet onions
  • 2 cloves garlic
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 0.5 cup unsweetened almond milk
  • 1 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon coconut aminos

Directions

Step 1

Peel the sweet onions and cut them into thin slices.

Step 2

Peel and roughly chop the garlic cloves.

Step 3

Heat a skillet over medium heat and add the olive oil.

Step 4

Add the sliced sweet onions to the skillet and cook for 12-15 minutes, stirring occasionally, until they are soft and caramelized. Reduce the heat if they begin to brown too quickly.

Step 5

Add the chopped garlic to the skillet and cook for an additional 2-3 minutes until the garlic is fragrant but not burnt.

Step 6

Transfer the cooked onions and garlic to a blender or food processor.

Step 7

Add the apple cider vinegar, unsweetened almond milk, salt, black pepper, and coconut aminos to the blender.

Step 8

Blend on high speed until the mixture is smooth and creamy. You may need to stop and scrape down the sides of the blender to ensure everything is well incorporated.

Step 9

Taste the sauce and adjust the seasoning if needed by adding more salt or black pepper.

Step 10

Allow the sauce to cool before serving, or use it warm as a drizzle over your favorite Whole30-compliant dishes.
