Ingredients

  • 3 medium (about 1 pound total) beets
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice

  • 0.5 teaspoons sea salt
  • 0.25 teaspoons ground cumin
  • 0.25 teaspoons black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Trim the stems and roots from the beets and scrub them well. Wrap each beet individually in aluminum foil and place them on a baking sheet.

Roast the beets in the oven for 35-40 minutes, or until fork tender. Cooking time may vary depending on beet size.
