Ingredients

  • 2 pounds pork loin roast
  • 6 cloves garlic cloves
  • 2 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 2 tablespoons extra-virgin olive oil
  • 1 teaspoon lemon zest
  • 1.5 teaspoons sea salt
  • 1 teaspoon black pepper
  • 1 yellow onion
  • 3 carrots
  • 1 cup chicken broth (Whole30-compliant)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Pat the pork loin roast dry with paper towels and set it aside.

Step 3

Mince the garlic cloves finely and strip the rosemary and thyme leaves from their stems. Chop the herbs finely.

In a small bowl, combine the minced garlic, chopped rosemary and thyme, olive oil, lemon zest, sea salt, and black pepper. Mix into a paste.
