Ingredients

  • 4 medium zucchini
  • 3 tablespoons coconut aminos
  • 3 cloves garlic
  • 1 teaspoon ginger
  • 1 tablespoon coconut oil
  • 1 teaspoon sesame oil
  • 0.25 teaspoon red chili flakes
  • 0.25 teaspoon salt
  • 2 stalks green onion
  • 1 teaspoon toasted sesame seeds

Directions

Step 1

Wash and dry the zucchini. Cut off the ends and slice them into thin coins or half-moons about 1/4-inch thick.

Step 2

Peel and mince the garlic cloves. Peel and grate or finely mince the ginger. Thinly slice the green onion, separating the white and green parts.

Step 3

Heat a large skillet or wok over medium-high heat. Add coconut oil and sesame oil to the pan, allowing it to heat until shimmering.

Step 4

Add the minced garlic, grated ginger, and the white parts of the green onion to the skillet. Stir-fry for 30-60 seconds, or until fragrant, being careful not to let the garlic burn.
