Ingredients

  • 300 grams water spinach (also known as kangkong or morning glory)
  • 3 pieces garlic cloves
  • 1 piece red chili (optional, adjust for spice preference)
  • 2 tablespoons coconut aminos
  • 1 tablespoon avocado oil
  • 0.5 teaspoons salt
  • 0.5 piece fresh lime (optional, for garnish)

Directions

Step 1

Thoroughly rinse the water spinach to remove any dirt or debris. Trim the tough ends of the stems and cut the remaining stems and leaves into 4-inch pieces. Drain and set aside.

Step 2

Peel and finely mince the garlic cloves. If using chili, thinly slice it into rounds.

Step 3

Heat a large skillet or wok over medium-high heat. Add the avocado oil and swirl to coat the pan.

Step 4

Once the oil is hot, add the minced garlic and chili (if using). Stir-fry for 30 seconds or until fragrant, being careful not to burn the garlic.

Step 5

Increase the heat to high and add the water spinach to the pan. Sprinkle in the salt and quickly toss to combine.

Step 6

Drizzle the coconut aminos over the water spinach and continue stir-frying for 2-3 minutes, or until the spinach has wilted and the stems are tender-crisp.

Step 7

Transfer the stir-fried water spinach to a serving plate. If desired, squeeze fresh lime juice over the top for added brightness.

Step 8

Serve immediately as a side dish or on its own for a light, Whole30-compliant meal.
