Ingredients

  • 3 medium zucchini (for noodles)
  • 3 tablespoons coconut aminos
  • 1 tablespoon sesame oil

  • 3 cloves garlic cloves, minced

  • 1 large red bell pepper, thinly sliced
  • 2 cups broccoli florets
  • 1 cup carrots, julienned
  • 1 cup snap peas
  • 2 stalks green onion, sliced
  • 1 teaspoon sesame seeds (optional)
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Using a spiralizer, create zucchini noodles using the 3 medium zucchinis. Set aside.

Step 2

In a small bowl, whisk together the coconut aminos and sesame oil. Set aside.

Step 3

Heat the olive oil in a large skillet or wok over medium-high heat.

Step 4

Add the minced garlic and ginger to the pan, and sauté for 1 minute until fragrant.
