Ingredients

  • 300 grams Morning glory (water spinach)
  • 3 cloves Garlic
  • 2 Red chili
  • 2 tablespoons Coconut aminos
  • 1 tablespoon Fish sauce (Whole30-compliant)
  • 1 tablespoon Lime juice
  • 2 tablespoons Avocado oil (or any Whole30-compliant cooking oil)

Directions

Step 1

Wash the morning glory thoroughly to remove any dirt. Trim off any tough stems, leaving the tender shoots and leaves intact. Cut into 4-inch segments and set aside.

Step 2

Peel the garlic and smash the cloves using the side of a knife. Roughly chop them. Deseed and slice the red chili thinly.

Step 3

In a small bowl, mix together the coconut aminos, fish sauce, and lime juice to create the stir-fry sauce. Set aside.

Step 4

Heat a wok or large skillet over high heat until hot. Add the avocado oil and swirl to coat the surface.

Step 5

Add the chopped garlic and sliced red chili to the wok. Stir-fry for about 30 seconds, or until fragrant and lightly golden.

Step 6

Add the prepared morning glory to the wok. Stir quickly to combine with the garlic and chili, ensuring even contact with the heat.

Step 7

Pour in the stir-fry sauce while continuing to stir. Cook for 1-2 minutes, or until the morning glory is tender but still crisp and vibrant green.

Step 8

Immediately remove from heat to prevent overcooking. Transfer to a serving plate and enjoy warm.
