Ingredients

  • 1 pound ground beef (85% lean)
  • 12 ounces fresh green beans, trimmed
  • 0.25 cup coconut aminos
  • 1 tablespoon sesame oil
  • 1 tablespoon avocado oil
  • 3 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated
  • 0.25 teaspoon red pepper flakes (optional)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 1 whole lime wedges (for serving)

Directions

Step 1

Trim the green beans and cut them into bite-sized pieces, approximately 2 inches long.

Step 2

Heat a large skillet or wok over medium-high heat and add the avocado oil.

Step 3

Once the oil is hot, add the ground beef to the skillet. Cook until browned, breaking it apart into crumbles with a spatula, about 5-7 minutes. Season the beef with salt and black pepper. Once cooked, remove the ground beef from the skillet and set it aside, leaving any rendered fat in the skillet.

Step 4

In the same skillet, add the green beans. Sauté for 3-4 minutes until they are bright green and slightly tender but still crisp.

Step 5

Push the green beans to the side of the skillet and add the sesame oil, minced garlic, and grated ginger to the center. Cook for 30 seconds until aromatic, stirring constantly to prevent burning.

Step 6

Return the cooked ground beef to the skillet. Pour in the coconut aminos and sprinkle in the red pepper flakes (if using). Stir everything together until the sauce evenly coats the beef and green beans.

Step 7

Allow the stir-fry to cook for an additional 2-3 minutes, letting the flavors meld together and the green beans soften to your liking.

Step 8

Remove from heat and serve hot. Squeeze fresh lime juice over the dish for added brightness before serving.
