Ingredients

  • 2 cups cassava flour
  • 0.5 cup tapioca starch
  • 1 cup coconut milk (full-fat, unsweetened)
  • 2 tablespoons coconut oil
  • 1 teaspoon apple cider vinegar
  • 0.5 teaspoon baking powder (Whole30-approved, aluminum-free)
  • 0.5 teaspoon sea salt
  • 1 sheet parchment paper (for steaming)

Directions

Step 1

In a large mixing bowl, combine cassava flour, tapioca starch, baking powder, and sea salt. Whisk together until evenly mixed.

Step 2

In a small saucepan or microwave-safe bowl, melt the coconut oil, then stir it into the coconut milk and apple cider vinegar.

Step 3

Slowly pour the wet ingredients into the dry ingredients, mixing with a wooden spoon or your hands until a dough forms. The dough should feel soft and pliable but not sticky. If too dry, add a tablespoon of coconut milk at a time until the right consistency is achieved.

Step 4

Lightly dust a clean surface with additional tapioca starch. Knead the dough for 2-3 minutes to ensure a smooth texture.

Step 5

Divide the dough into 8 equal portions and roll each portion into a ball. Flatten each ball into a small round disc about 1/4-inch thick.

Step 6

If desired, fold each disc in half to create a traditional bao bun shape. Place each bun onto a small square of parchment paper to prevent sticking during steaming.

Step 7

Bring a pot of water to a gentle simmer and set up a steamer basket. Place the buns (on their parchment squares) into the steamer, making sure they do not touch.

Step 8

Cover and steam the buns for 10 minutes, or until they are puffed and cooked through.

Step 9

Carefully remove the buns from the steamer and let them cool for a few minutes. Serve warm with your favorite Whole30-compliant fillings, such as shredded chicken, sautéed vegetables, or avocado slices.
