Ingredients

  • 4 medium russet potatoes
  • 3 tablespoons olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 medium (about 12 ounces each) New York strip steaks
  • 1 tablespoon ghee
  • 2 whole, smashed garlic cloves
  • 1 fresh rosemary sprig
  • 2 tablespoons, finely chopped fresh parsley

Directions

Step 1

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone baking mat.

Step 2

Scrub the russet potatoes clean and pat them dry. Cut them into evenly sized matchstick fries, about 1/4 inch thick.

Step 3

In a large bowl, toss the potato fries with 2 tablespoons of olive oil, 1 teaspoon of kosher salt, and 1/2 teaspoon of black pepper. Spread them out in a single layer on the prepared baking sheet.

Step 4

Bake the fries in the preheated oven for 25-30 minutes, flipping them halfway through, until golden and crispy. Check for even browning and adjust cooking time as needed.

Step 5

While the fries bake, bring the steaks to room temperature and season both sides generously with the remaining 1 teaspoon of kosher salt and 1/2 teaspoon of black pepper.

Step 6

Heat a large cast-iron or stainless steel skillet over medium-high heat. Add 1 tablespoon of olive oil and swirl to coat the pan.

Step 7

Place the steaks in the hot skillet and sear without moving for 3-4 minutes on the first side until a crust forms.

Step 8

Flip the steaks and immediately add the ghee, smashed garlic cloves, and rosemary sprig to the pan. Tilt the skillet slightly and use a spoon to baste the steaks with the melted ghee and aromatics for about 2-3 minutes, or until the internal temperature reaches your desired doneness (130°F for medium-rare).

Step 9

Transfer the steaks to a cutting board and let them rest for 5-10 minutes, tented with foil to retain heat.

Step 10

To serve, plate the crispy fries beside the seared steak. Garnish with freshly chopped parsley and enjoy this hearty, Whole30-compliant dish.
