Ingredients

  • 2 pieces Grain-free tortillas (Whole30-compliant)
  • 2 cups Fresh spinach
  • 1 cup Cashews (soaked for at least 2 hours)
  • 3 tablespoons Nutritional yeast
  • 1 cup Unsweetened almond milk
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 tablespoon Lemon juice
  • 1 teaspoon Avocado oil
  • 1 teaspoon Sea salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Start by preparing the cashew cheese sauce. Drain the soaked cashews and add them to a blender or food processor along with almond milk, nutritional yeast, garlic powder, onion powder, lemon juice, sea salt, and black pepper. Blend until smooth and creamy. Set aside.

Step 2

Heat a non-stick skillet over medium heat and add 1 teaspoon of avocado oil.

Step 3

Add the fresh spinach to the skillet and sauté for 2-3 minutes, or until wilted. Remove the spinach from the pan and set aside.

Wipe the skillet clean with a paper towel, if necessary, and reduce the heat to low-medium.
