Ingredients

  • 500 grams mutton (bone-in or boneless, cut into bite-sized pieces)
  • 2 tablespoons coconut oil
  • 2 medium red onions, thinly sliced
  • 4 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 green chilies, slit lengthwise
  • 2 small tomatoes, finely chopped
  • 0.5 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1 teaspoon ground coriander
  • 1 teaspoon garam masala
  • 10 leaves curry leaves
  • 2 tablespoons fresh cilantro, chopped
  • 1 teaspoon salt
  • 1 cup water

Directions

Step 1

Rinse the mutton pieces under cold running water and drain well. Set them aside.

Step 2

Heat the coconut oil in a heavy-bottomed skillet or frying pan over medium heat.

Step 3

Add the curry leaves to the hot oil and sauté for a few seconds until fragrant.

Step 4

Add the sliced red onions and sauté for 5-7 minutes until golden brown.

Step 5

Stir in the minced garlic, ginger, and green chilies, and sauté for another 2 minutes until aromatic.

Step 6

Add the chopped tomatoes and cook for 5-7 minutes, stirring occasionally, until the mixture becomes soft and mushy.

Step 7

Sprinkle in the turmeric powder, red chili powder, ground coriander, and salt. Mix well to coat the onion-tomato mixture evenly with the spices.

Step 8

Add the mutton pieces to the skillet and stir well to coat them with the spice mixture.

Step 9

Pour in the water, cover the skillet with a lid, and reduce the heat to low. Let the mutton simmer for 25-30 minutes, stirring occasionally, until the meat is tender and cooked through.

Step 10

Once the mutton is cooked, uncover and increase the heat to medium-high. Cook for an additional 5-7 minutes, stirring frequently, until the excess liquid has evaporated and the dish achieves a dry, fried consistency.

Step 11

Sprinkle garam masala over the mutton fry and mix well.

Step 12

Garnish the dish with freshly chopped cilantro before serving. Enjoy your Whole30 Spicy Mutton Fry hot with a side of steamed vegetables or a fresh salad.
