Use a spiralizer to turn the zucchini into noodles (zoodles) and set them aside. Alternatively, use a julienne peeler if you don’t have a spiralizer.
Heat 1 tablespoon of cooking oil in a large skillet over medium heat. Add the Whole30-compliant sausage and cook until browned and fully cooked through, about 5-7 minutes. Remove the cooked sausage from the skillet and set it aside.
In the same skillet, add the remaining 1 tablespoon of cooking oil. Dice the onion and mince the garlic cloves. Sauté the onion in the skillet until soft and translucent, about 3-4 minutes. Add the garlic and cook for another minute until fragrant.
