  • 3 cloves (minced) garlic
  • 28 ounces (canned, unsalted) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 0.25 teaspoons (optional) red pepper flakes
  • 0.5 teaspoons sea salt
  • 0.25 teaspoons black pepper
  • 2 tablespoons (chopped, optional for garnish) fresh basil

Directions

Step 1

Use a spiralizer to create zucchini noodles (zoodles) from the zucchini. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat.

Step 3

Add the diced onion to the skillet and sauté for 3-4 minutes, until softened.

Step 4

Stir in the minced garlic and cook for another 30 seconds, until fragrant.

Step 5

Add the crushed tomatoes, tomato paste, dried basil, dried oregano, red pepper flakes (if using), sea salt, and black pepper. Stir well to combine.

Step 6

Bring the tomato sauce to a simmer, reduce the heat to low, and let it cook uncovered for 15-20 minutes, stirring occasionally, until thickened.

Step 7

In a separate large skillet, heat the remaining 1 tablespoon of olive oil over medium heat.

Step 8

Add the zucchini noodles to the skillet and sauté for 2-3 minutes, stirring occasionally, until just tender but not overly soft.

Step 9

Remove the zucchini noodles from heat and divide them among serving plates.

Spoon the tomato sauce over the zucchini noodles and garnish with fresh basil, if desired. Serve immediately and enjoy your Whole30-friendly spaghetti!
