  • 1 cup Raw cashews
  • 0.5 cup Water
  • 2 tablespoons Fresh lime juice

  • 2 teaspoons Apple cider vinegar
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Chili powder
  • 0.5 teaspoon Salt
  • 1 piece Chipotle pepper (from canned chipotles in adobo)*
  • 3 tablespoons Water (extra, if needed)

Directions

Step 1

Place the raw cashews in a bowl and cover them with warm water. Let them soak for at least 10 minutes or up to 2 hours to soften. Drain and rinse thoroughly before proceeding.

Step 2

In a high-speed blender or food processor, combine the soaked and drained cashews, 1/2 cup water, fresh lime juice, olive oil, apple cider vinegar, garlic powder, onion powder, ground cumin, smoked paprika, chili powder, salt, and the chipotle pepper.

Step 3

Blend the ingredients on high speed until completely smooth and creamy. If the mixture is too thick, add 1 tablespoon of water at a time until the desired consistency is reached.
