Ingredients

  • 3 pounds Boneless leg of lamb
  • 4 sprigs Fresh rosemary
  • 6 whole Garlic cloves
  • 2 tablespoons Olive oil
  • 1 large Onion
  • 4 medium Carrots
  • 3 large Celery stalks
  • 1 cup Beef broth (Whole30 compliant)
  • 1 large Lemon
  • 1.5 teaspoons Salt
  • 1 teaspoon Black pepper

Directions

Step 1

Peel and chop the onion into large chunks.

Step 2

Peel and slice the carrots into thick rounds.

Step 3

Chop the celery stalks into large pieces.

Step 4

Peel the garlic cloves and gently crush them with the side of a knife.

Step 5

Zest the lemon and set aside the zest, then cut the lemon into slices.

In a small bowl, combine the olive oil, lemon zest, salt, and black pepper.
