Ingredients

  • 1 pound Pork belly
  • 0.5 pound Pork liver
  • 1 large Red onion
  • 3 cloves Garlic
  • 2 pieces Green chili peppers
  • 2 tablespoons Coconut aminos
  • 2 tablespoons Lime juice
  • 1 teaspoon Black pepper
  • 0.5 teaspoon Salt
  • 2 tablespoons Coconut oil
  • 2 pieces Scallions
  • 2 large Eggs

Directions

Step 1

Start by boiling the pork belly in a saucepan with enough water to cover it. Boil over medium heat for about 30 minutes until tender. Remove the pork belly from the water and allow it to cool.

Step 2

Once the pork belly is cool enough, cut it into small cubes.

Step 3

In a separate pot, boil the pork liver with a bit of water until fully cooked, about 10 minutes. Let it cool slightly and then chop it into small pieces.

Step 4

Chop the red onion and mince the garlic. Dice the green chili peppers and slice the scallions thinly, keeping them separate.

Step 5

Heat 1 tablespoon of coconut oil in a large skillet over medium heat. Add the chopped onions and garlic, and sauté until the onions are soft and translucent, about 3-4 minutes.

Add the chopped pork belly and liver to the pan. Cook until the pork is lightly browned and crispy around the edges, stirring occasionally.

Pour in the coconut aminos and lime juice. Add the diced green chili peppers, black pepper, and salt. Continue to cook for another 5-7 minutes, allowing the flavors to meld together.

Push the pork mixture to one side of the pan and add the remaining tablespoon of coconut oil to the empty side of the pan. Crack the eggs into the pan and scramble them lightly.
