Ingredients

  • 2 pounds Pork spareribs, cut into pieces
  • 8 cups Water
  • 3 medium Tomatoes, quartered
  • 1 medium Yellow onion, quartered
  • 3 cloves Garlic cloves, smashed
  • 3 tablespoons Tamarind paste (Whole30 compliant)
  • 2 tablespoons Fish sauce (Whole30 compliant)
  • 1 small Daikon radish, peeled and sliced
  • 1 medium Eggplant, diced
  • 10 pieces Okra
  • 1 cup Green beans, trimmed
  • 2 cups Water spinach (kangkong) or spinach
  • 1 piece Green chile or jalapeño, optional for spice
  • 1 to taste Salt
  • 1 to taste Black pepper

Directions

Step 1

In a large pot, combine the pork spareribs and water. Bring to a boil over medium-high heat, skimming off any foam that rises to the surface.

Once boiling, reduce the heat to medium-low and add the tomatoes, onion, and garlic. Cover and simmer for about 30 minutes, or until the pork is tender.
