Ingredients

  • 4 cups Zucchini noodles
  • 2 cups Carrot noodles
  • 1 medium, sliced thinly Red bell pepper
  • 2 cups Broccoli florets
  • 1 cup Snow peas
  • 2 sliced thinly Green onions
  • 3 cloves, minced Garlic
  • 1 tablespoon, minced Ginger
  • 0.25 cup Coconut aminos
  • 2 tablespoons Sesame oil
  • 1 tablespoon Olive oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon, for garnish Sesame seeds

Directions

Step 1

Prepare your vegetable noodles: spiralize zucchini and carrots if not pre-spiralized.

Step 2

In a large skillet or wok, heat olive oil over medium-high heat.

Step 3

Add garlic and ginger. Stir-fry for about 30 seconds until they are fragrant.

Step 4

Add red bell pepper slices, broccoli florets, and snow peas. Stir-fry for 3-4 minutes until the vegetables are just tender.

Step 5

Reduce heat to medium and add zucchini and carrot noodles to the skillet.
