Ingredients

  • 4 medium Yukon Gold potatoes
  • 2 tablespoons olive oil
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 onion
  • 3 garlic cloves
  • 2 tablespoons fresh parsley
  • 1 teaspoon sea salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1 tablespoon lemon juice

Directions

Step 1

Peel the potatoes and cut them into small cubes, roughly 1/2 inch in size.

Step 2

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.

Step 3

Add the potatoes to the skillet and cook for about 10-12 minutes, stirring occasionally, until they are golden and tender.

While potatoes are cooking, dice the red and green bell peppers, and chop the onion. Mince the garlic cloves.

Once potatoes are done, remove them from the skillet and set aside.
