Ingredients

  • 2 whole Artichokes
  • 1 whole Lemon
  • 2 pieces Bay leaves
  • 1 tablespoon Salt
  • 8 cups Water
  • 0.5 cup Whole30-compliant mayonnaise
  • 0.5 teaspoon Garlic powder

Directions

Step 1

Begin by preparing the artichokes. Trim the stem to about 1 inch long. Remove the small tough leaves at the base of the artichoke.

Step 2

Cut about 1 inch off the top of each artichoke to remove the thorny tips.

Step 3

Rub the cut edges of the artichokes with the lemon to prevent browning.

Step 4

Fill a large pot with 8 cups of water and bring to a boil.

Step 5

Add the bay leaves and salt to the boiling water.

Step 6

Place the prepared artichokes in the pot, ensuring they're fully submerged in the water.

Step 7

Reduce the heat to a simmer and cover the pot.

Step 8

Simmer the artichokes for approximately 35 to 40 minutes, or until you can easily insert a knife into the base.

Step 9

While the artichokes are cooking, prepare the dipping sauce. In a small bowl, mix together the Whole30-compliant mayonnaise and garlic powder.

Step 10

Once cooked, remove the artichokes from the pot and allow them to drain for a few minutes upside down on a towel or in a colander.

Step 11

Serve the artichokes warm with the garlic mayonnaise on the side for dipping.

Step 12

To eat, pull off leaves, dip the base in the mayonnaise, and scrape the flesh off with your teeth.
