Ingredients

  • 2 tablespoons olive oil
  • 12 ounces andouille sausage, sliced
  • 1 pound medium shrimp, peeled and deveined
  • 1 large yellow onion, diced
  • 1 large green bell pepper, diced
  • 3 celery stalks, diced
  • 4 garlic cloves, minced
  • 1 cup canned crushed tomatoes
  • 4 cups chicken broth
  • 2 bay leaves
  • 2 tablespoons Cajun seasoning
  • 1 teaspoon dried thyme
  • 2 cups okra, sliced
  • 0.25 cup fresh parsley, chopped
  • 3 green onions, sliced
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon hot sauce

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium heat. Add the sliced andouille sausage and cook until browned, about 5 minutes. Remove sausage from the pot and set aside.

Step 2

In the same pot, add the remaining tablespoon of olive oil. Add the diced onion, bell pepper, and celery. Cook until the vegetables are softened, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional minute.

Step 4

Add the crushed tomatoes and chicken broth to the pot. Stir well to combine.

Step 5

Add the cooked sausage back into the pot along with the bay leaves, Cajun seasoning, dried thyme, salt, pepper, and hot sauce. Stir to combine and bring to a simmer.
