Ingredients

  • 1 tablespoon olive oil
  • 0.5 pound ground beef (grass-fed, ideally 85% lean)
  • 0.5 cup onion
  • 0.5 cup bell pepper
  • 2 cloves garlic
  • 6 large eggs
  • 0.25 cup coconut milk
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons green onions

Directions

Step 1

Heat 1 tablespoon of olive oil in a large non-stick skillet over medium heat.

Step 2

Add 0.5 pounds of ground beef to the skillet. Cook and stir until the beef is browned and cooked through, about 5-6 minutes. Break up the meat with a spatula as it cooks.

Step 3

Add 0.5 cup of chopped onion and 0.5 cup of diced bell pepper to the skillet. Sauté for about 3 minutes until the vegetables are softened.

Step 4

Mince 2 garlic cloves and add them to the skillet. Stir everything together for another 1-2 minutes until the garlic is fragrant.

Step 5

While the beef and vegetables are cooking, crack 6 large eggs into a mixing bowl. Add 0.25 cup of coconut milk, 0.5 teaspoon of salt, and 0.25 teaspoon of black pepper. Whisk the mixture thoroughly until blended.

Step 6

Reduce the skillet heat to low and pour the egg mixture over the beef and vegetables. Gently stir with a spatula as the eggs start to set, cooking slowly to create fluffy scrambled eggs. This should take another 3-4 minutes.

Step 7

Adjust seasoning if necessary, then sprinkle 2 tablespoons of chopped green onions over the top just before serving.

Step 8

Serve immediately, dividing between two plates for a hearty breakfast.
