Ingredients

  • 3 pounds pork shoulder
  • 2 teaspoons sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground caraway seeds
  • 2 tablespoons olive oil
  • 2 large yellow onions, sliced
  • 4 medium carrots, sliced
  • 3 celery stalks, sliced
  • 4 garlic cloves, minced
  • 2 tablespoons tomato paste
  • 3 cups beef broth
  • 2 bay leaves

Directions

Step 1

Preheat your oven to 325°F (165°C).

Step 2

Trim any excess fat from the pork shoulder and pat it dry with paper towels.

Step 3

In a small bowl, combine sea salt, black pepper, garlic powder, onion powder, and ground caraway seeds.

Step 4

Rub the spice mixture evenly over the pork shoulder.

Step 5

In a large oven-safe Dutch oven, heat olive oil over medium-high heat.

Step 6

Sear the pork shoulder on all sides until well-browned, about 4-5 minutes per side. Remove the pork shoulder from the Dutch oven and set aside.

Step 7

Add sliced onions, carrots, celery, and minced garlic to the Dutch oven and sauté for 5 minutes until they begin to soften.

Step 8

Stir in the tomato paste and cook for an additional 2 minutes.

Step 9

Pour in the beef broth, scraping up any browned bits from the bottom of the pot, and bring to a simmer.

Step 10

Add the bay leaves to the pot and return the seared pork shoulder to the Dutch oven.

Step 11

Cover the Dutch oven with a lid and transfer it to the preheated oven. Roast for about 3 hours or until the pork is tender and shreds easily with a fork.

Step 12

Remove the pork shoulder from the oven and let it rest for 10 minutes before slicing.

Step 13

Serve the sliced pork with the vegetables and broth from the Dutch oven. Enjoy this hearty and flavorful dish!
