Ingredients

  • 1 pound ground turkey
  • 2 tablespoons olive oil
  • 1 medium white onion, diced
  • 1 medium red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped
  • 1 whole lime, juiced
  • 8 large romaine lettuce leaves
  • 1 large avocado, sliced
  • 1 cup cherry tomatoes, quartered
  • 1 small jalapeño, sliced (optional)

Directions

Step 1

In a large skillet, heat olive oil over medium heat.

Step 2

Add the diced onion and red bell pepper to the skillet and sauté until the onion becomes translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the ground turkey to the skillet. Cook the turkey, breaking it apart with a spatula, until it is browned and cooked through, approximately 8-10 minutes.

Step 5

Sprinkle the cumin, chili powder, paprika, sea salt, and black pepper over the turkey mixture. Stir well to combine all the ingredients.

Step 6

Reduce the heat to low and allow the mixture to simmer for another 5 minutes, allowing the flavors to meld together.

Step 7

Turn off the heat and stir in the chopped cilantro and lime juice.

Step 8

To assemble the burritos, lay out the romaine lettuce leaves on a flat surface.

Step 9

Spoon the turkey mixture onto the center of each lettuce leaf.

Step 10

Top with a few slices of avocado, some quartered cherry tomatoes, and, if using, a few slices of jalapeño.

Step 11

Roll the lettuce leaf around the filling to create a burrito wrap or fold them taco-style, and serve immediately.
