Ingredients

  • 1 pound ground beef
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 3 pieces garlic cloves, minced
  • 2 medium carrot, diced
  • 2 medium celery stalks, diced
  • 1 large red bell pepper, diced
  • 14.5 ounces canned diced tomatoes
  • 1 cup beef broth (Whole30 compliant)
  • 1 piece bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the diced onion and garlic to the pot and sauté for about 3 minutes, until the onion becomes translucent.

Step 3

Add the ground beef to the pot, breaking it up with a wooden spoon, and cook until browned, about 5-7 minutes.

Step 4

Stir in the diced carrots, celery, and red bell pepper, cooking for another 5 minutes until the vegetables begin to soften.

Step 5

Pour in the canned diced tomatoes with their juice and the beef broth. Stir to combine.

Step 6

Add the bay leaf, dried thyme, salt, black pepper, and cayenne pepper. Stir the mixture well and bring it to a simmer.

Step 7

Lower the heat to medium-low, cover the pot, and let it simmer for 25-30 minutes, stirring occasionally.

Step 8

After the stew has thickened and the flavors melded, remove the bay leaf.

Step 9

Adjust seasoning with additional salt and pepper if needed, and garnish with fresh parsley before serving.
