Ingredients

  • 4 medium zucchini
  • 1 pound ground beef
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 3 cloves garlic
  • 14.5 ounces canned tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon basil
  • 1 teaspoon oregano
  • 0.5 teaspoon red pepper flakes
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons parsley

Directions

Step 1

1. Spiralize the zucchinis or slice them into thin noodles using a julienne peeler. Set aside.

2. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it apart with a spoon, until browned and cooked through, about 5-7 minutes. Remove the beef from the pan and set aside.
