Ingredients

  • 12 oz Baby bella mushrooms
  • 1 small Yellow onion
  • 3 large Garlic cloves
  • 2 large Eggs
  • 0.5 cup Almond flour
  • 0.25 cup Chopped fresh parsley
  • 2 tbsp Coconut aminos
  • 3 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Begin by cleaning the baby bella mushrooms with a damp cloth to remove any dirt. Finely chop them and set aside.

Step 2

Peel and finely chop the yellow onion. Mince the garlic cloves.

Step 3

In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onions and cook until they are translucent, about 3-4 minutes.

Add the minced garlic to the skillet and sauté for another minute until fragrant.

Step 5

Stir in the chopped mushrooms and increase the heat to medium-high. Cook until the mushrooms release their moisture and become tender, about 5-6 minutes.
