Ingredients

  • 2 cups Broccoli florets
  • 2 large Carrots
  • 1 large Red bell pepper
  • 1 medium Yellow squash
  • 1 medium Red onion
  • 1 medium Zucchini
  • 3 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C).

Wash and prepare the vegetables: cut the broccoli florets, peel and slice the carrots into thin rounds, deseed and chop the red bell pepper into 1-inch pieces, slice the yellow squash and zucchini into 1/2-inch rounds, and peel and slice the red onion into thin wedges.
