Ingredients

  • 1 pound ground beef
  • 1 large head cauliflower
  • 2 tablespoons olive oil
  • 1 medium (diced) onion
  • 3 minced garlic cloves
  • 1 medium (diced) bell pepper
  • 2 tablespoons coconut aminos
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 chopped green onions
  • 0.25 cup (chopped) fresh cilantro

Directions

Step 1

Cut the cauliflower into florets and place them in a food processor. Pulse until the cauliflower resembles the size and texture of rice. Set aside.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion and sauté for 3-4 minutes until it becomes translucent.

Step 3

Add the minced garlic and diced bell pepper to the skillet. Sauté for another 2 minutes until the bell pepper begins to soften.
