Ingredients

  • 1 pound ground chicken
  • 0.5 cup almond flour
  • 1 large egg
  • 0.5 cup onion
  • 2 cloves garlic
  • 0.25 cup fresh parsley
  • 1 teaspoon dried oregano
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons olive oil

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

Finely chop the onion and garlic, and chop the fresh parsley.

Step 3

In a large bowl, combine the ground chicken, almond flour, egg, chopped onion, garlic, and parsley.

Step 4

Add the dried oregano, salt, and black pepper to the bowl. Mix everything gently with your hands until evenly combined.

Step 5

Using your hands, form the mixture into meatballs about 1.5 inches in diameter. You should get around 16 meatballs.

Step 6

Place the meatballs evenly spaced on the prepared baking sheet.

Step 7

Heat a large skillet over medium heat and add olive oil.

Step 8

Once the oil is hot, add half of the meatballs to the skillet. Sear the meatballs by turning them occasionally until they are lightly browned on all sides, about 6-8 minutes.

Step 9

Transfer the seared meatballs back to the baking sheet. Repeat with the remaining meatballs.

Step 10

Once all the meatballs are seared, place the baking sheet in the preheated oven.

Step 11

Bake the meatballs for 15-18 minutes or until they are cooked through and reach an internal temperature of 165°F (74°C).

Step 12

Remove from oven and let rest for a few minutes before serving.

Step 13

Serve warm as an appetizer or alongside a salad or vegetable side dish for a complete meal.
