Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 units garlic cloves, minced
  • 2 medium carrots, diced
  • 1 medium red bell pepper, diced
  • 2 cups broccoli florets
  • 4 cups cauliflower rice
  • 0.5 cup chicken broth
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons coconut aminos
  • 1 tablespoon lemon juice

Directions

Step 1

Cut the chicken breasts into bite-sized pieces. Season with salt and black pepper.

Step 2

In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chicken pieces and cook for about 5-7 minutes until golden and cooked through. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the diced onion and minced garlic, cooking for 2-3 minutes until the onion is translucent and the garlic is fragrant.

Step 4

Add the diced carrots and red bell pepper to the skillet. Sauté for 5 minutes until they start to soften.
