  • 500 grams beef stew meat
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic cloves, minced
  • 2 medium carrots, sliced
  • 2 stalks celery stalks, sliced
  • 2 medium sweet potatoes, peeled and cubed
  • 1 medium red bell pepper, chopped
  • 1 medium zucchini, sliced
  • 400 grams diced tomatoes
  • 500 milliliters beef broth
  • 1 leaf bay leaf
  • 1 teaspoon fresh thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat 1 tablespoon of olive oil in a large pot over medium-high heat.

Step 2

Add the beef stew meat to the pot and brown on all sides. Remove the meat and set it aside.

Step 3

Add the remaining 1 tablespoon of olive oil to the pot, then add the diced onion and minced garlic. Sauté until the onion is translucent, about 5 minutes.
