Preheat the oven to 375°F (190°C).
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and garlic and sauté until the onion is translucent, about 3-4 minutes.
Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes. Remove the skillet from heat and set aside to cool slightly.
In a large mixing bowl, combine the ground beef, egg, Italian seasoning, salt, and pepper. Mix until all ingredients are well incorporated.
Lay out a large piece of parchment paper on a flat surface. Spread the beef mixture evenly into a rectangle about 1/2 inch thick.
Spread the cooked spinach mixture evenly over the beef layer, leaving a small border along the edges.

Using the parchment paper to assist, carefully roll the beef up tightly, starting from one of the shorter ends of the rectangle, similar to a jelly roll.

Transfer the beef roll to a baking sheet lined with parchment paper. Brush the roll with the remaining tablespoon of olive oil.
Bake in the preheated oven for 25-30 minutes, or until the beef is cooked through and reaches an internal temperature of 160°F (71°C).
