Ingredients

  • 1 pound Ground beef (preferably grass-fed)
  • 1 medium Onion, diced
  • 3 cloves Garlic, minced
  • 1 medium Red bell pepper, diced
  • 2 medium Carrots, shredded
  • 8 oz Button mushrooms, finely chopped
  • 1 cup Crushed tomatoes, canned
  • 1 cup Beef broth (Whole30 compliant)
  • 2 tbsp Olive oil
  • 2 tsp Cumin
  • 1 tsp Paprika
  • 1 tsp Oregano
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped
  • 2 Green onions, sliced

Directions

Step 1

Heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 2

Add the diced onion and sauté for 3-4 minutes until translucent.

Step 3

Stir in the minced garlic and cook for about 1 minute until fragrant.

Add the diced red bell pepper, shredded carrots, and chopped mushrooms to the skillet and cook for 5-6 minutes, stirring occasionally, until they begin to soften.
