  • 0.25 teaspoon Black pepper
  • 2 large Eggs
  • 2 tablespoons Avocado oil
  • 1 medium Large sweet potatoes

Directions

Step 1

Peel the sweet potato and cut it into 1/2-inch-thick round slices to form the 'buns'. You will need four slices total.

Preheat the oven to 400°F (200°C). Place the sweet potato rounds on a baking sheet lined with parchment paper.

Step 3

Brush the sweet potato slices with a tablespoon of avocado oil and season with salt and pepper. Bake for 20 minutes, flipping halfway through, until they are tender and slightly crisp.
