Ingredients

  • 2 large sweet potatoes
  • 1 pound ground pork
  • 1 teaspoon fennel seeds
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 large eggs
  • 2 tablespoons nutritional yeast
  • 2 tablespoons coconut oil
  • 1 tablespoon avocado oil
  • 1 stalk, chopped green onion
  • 0.5 cup cashew cheese
  • 1 cup spinach

Directions

Step 1

Preheat the oven to 400°F (200°C). Slice the sweet potatoes into 1/2-inch thick rounds. You will need 8 slices in total.

Step 2

Arrange sweet potato slices on a baking sheet. Brush with avocado oil and bake for 25 minutes, flipping halfway through, until they are tender and slightly golden.

In a large bowl, mix the ground pork with fennel seeds, garlic powder, onion powder, smoked paprika, salt, and black pepper until fully combined.

Heat 1 tablespoon of coconut oil in a skillet over medium heat. Shape the pork mixture into 4 patties and cook in the skillet for 4-5 minutes per side, or until fully cooked.
