  • 8 pieces large romaine lettuce leaves
  • 1 pound Whole30-compliant chicken sausage
  • 2 tablespoons coconut oil
  • 1 large red bell pepper
  • 1 medium yellow onion
  • 2 cloves garlic
  • 1 large avocado
  • 2 tablespoons lime juice
  • 0.25 cup fresh cilantro leaves
  • 1 cup cherry tomatoes
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Start by preparing the vegetables. Dice the red bell pepper and yellow onion into small pieces. Mince the garlic cloves. Halve the cherry tomatoes and set aside.

Step 2

Peel and remove the pit from the avocado, then mash it in a bowl with a fork. Add the lime juice, salt, and black pepper to taste. Stir in chopped fresh cilantro and set aside.

In a large skillet, heat the coconut oil over medium heat. Add the diced onion and cook until it becomes translucent, about 5 minutes.
