  • 1 teaspoon garlic powder

  • 1 teaspoon salt

  • 0.5 teaspoon ground thyme
  • 2 tablespoons coconut oil
  • 4 eggs
  • 2 cups spinach leaves
  • 1 medium, diced bell pepper
  • 1 sliced avocado
  • 4 large collard green leaves

Directions

Step 1

In a large bowl, mix the ground pork, onion powder, garlic powder, dried sage, salt, black pepper, and ground thyme until well combined.

Step 2

Heat 1 tablespoon of coconut oil in a skillet over medium heat. Add the sausage mixture and cook, breaking up the meat with a spatula, until browned and fully cooked, about 10 minutes. Remove from the skillet and set aside.

In the same skillet, add the remaining 1 tablespoon of coconut oil. Add the diced bell pepper and cook until softened, about 3 minutes.
