Ingredients

  • 1.5 pounds Chicken breast, boneless and skinless
  • 0.25 cup Coconut aminos
  • 2 tablespoons Fresh lime juice
  • 0.25 cup Coconut milk, full-fat
  • 2 teaspoons Fish sauce
  • 1 teaspoon Ground turmeric
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground cumin
  • 3 cloves Garlic, minced
  • 1 tablespoon Fresh ginger, grated
  • 2 tablespoons Chopped cilantro
  • 2 tablespoons Olive oil
  • 8 pieces Wooden skewers

Directions

Step 1

Cut the chicken breasts into 1-inch cubes and set aside.

Step 2

In a large bowl, combine coconut aminos, lime juice, coconut milk, fish sauce, turmeric, coriander, cumin, minced garlic, grated ginger, and half of the chopped cilantro.

Step 3

Add the chicken cubes to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 2 hours or overnight for maximum flavor.

Step 4

Soak the wooden skewers in water for at least 30 minutes before grilling to prevent them from burning.

Step 5

Preheat a grill or grill pan over medium-high heat and lightly oil the grates with olive oil.

Step 6

Thread the marinated chicken pieces onto the soaked skewers, leaving a little space between each piece for even cooking.

Step 7

Grill the chicken skewers for 5-6 minutes on each side or until fully cooked and slightly charred.

Step 8

Remove from the grill and let the skewers rest for a couple of minutes.

Step 9

Garnish the skewers with the remaining chopped cilantro before serving.
