Ingredients

  • 1 large head Cauliflower
  • 0.5 cup Almonds
  • 2 tablespoons Olive oil
  • 1 medium Onion
  • 3 cloves Garlic
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley

Directions

Step 1

Remove the leaves and core from the cauliflower. Cut into florets and place them in a food processor. Pulse until the cauliflower resembles rice. Be careful not to over-process.

Chop the almonds coarsely and toast them in a dry skillet over medium heat for about 2-3 minutes until they become golden and fragrant. Set aside.
