Ingredients

  • 14 ounces firm tofu
  • 2 tablespoons extra virgin olive oil
  • 1 large red bell pepper, thinly sliced
  • 1 medium cucumber, sliced
  • 1 large carrot, julienned
  • 1 cup red cabbage, shredded
  • 2 pieces scallions, thinly sliced
  • 0.5 cup fresh cilantro, chopped
  • 3 tablespoons lime juice
  • 1 large avocado, diced
  • 1 tablespoon toasted sesame seeds
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon garlic powder

Directions

Step 1

Begin by pressing the tofu to remove excess moisture. Wrap the block of tofu in a clean kitchen towel and place a heavy object on top. Let it sit for at least 15 minutes.

Step 2

Once pressed, cut the tofu into 1/2-inch cubes.

Step 3

In a large non-stick skillet over medium heat, add 1 tablespoon of extra virgin olive oil. Add the tofu cubes and sauté until golden brown on all sides, about 8-10 minutes.
