Peel the mangoes and remove the pits. Chop the mango flesh into chunks.
In a blender, combine the mango chunks, coconut milk, lime juice, vanilla extract, and honey if using.
Blend the ingredients until smooth and creamy. Taste and adjust sweetness by adding more lime juice or honey, if desired.
Pour the blended mixture into popsicle molds, leaving a little space at the top to allow for expansion.
