Ingredients

  • 4 cups fresh raspberries
  • 0.5 cups water
  • 1 tablespoon unflavored gelatin
  • 2 tablespoons lemon juice
  • 1 teaspoon pure vanilla extract
  • 2 tablespoons date paste (optional for sweetness)

Directions

Step 1

Start by washing the raspberries thoroughly and drain them well.

Step 2

In a medium saucepan, combine the raspberries and water. Place over medium heat and bring to a simmer.

Step 3

Allow the raspberries to cook until they start to break down, about 5-7 minutes. Use a wooden spoon to help mash the raspberries as they cook.

Step 4

Once the raspberries are softened and mostly broken down, remove the saucepan from the heat.

Step 5

Strain the raspberry mixture through a fine-mesh sieve into a bowl to remove the seeds. Use the back of a spoon to press the raspberries and extract as much juice as possible.

Step 6

Pour the strained raspberry juice back into the saucepan and return to low heat.

Step 7

In a small bowl, sprinkle the unflavored gelatin over 2 tablespoons of cold water and let it sit for about a minute to bloom.

Step 8

Add the bloomed gelatin to the warm raspberry mixture, stirring constantly until the gelatin is fully dissolved, about 2-3 minutes.

Step 9

Stir in the lemon juice, vanilla extract, and date paste if using. Mix until everything is well combined.

Step 10

Pour the mixture into a heat-proof jar or a lidded container.

Step 11

Allow the jelly to cool to room temperature, then cover and refrigerate for at least 3-4 hours, or until firm.

Step 12

Once set, the raspberry jelly is ready to serve. Enjoy it as a topping on Whole30-approved breads, pancakes, or as a simple treat.
