Ingredients

  • 2 cups Almond flour
  • 1 cup Tapioca starch
  • 2 tablespoons Coconut flour
  • 1 teaspoon Salt
  • 1 teaspoon Baking powder
  • 2 large Eggs
  • 0.75 cup Warm water
  • 2 tablespoons Olive oil

Directions

Step 1

In a large mixing bowl, combine almond flour, tapioca starch, coconut flour, salt, and baking powder. Stir until well mixed.

Step 2

In a separate bowl, whisk together the eggs, warm water, and olive oil until combined.

Step 3

Pour the wet ingredients into the dry ingredients. Stir to form a soft dough. If the mixture is too sticky, sprinkle a little more almond flour until manageable.

Step 4

Divide the dough into 8 equal portions and roll each portion into a ball between your hands.

Step 5

Using a rolling pin, flatten each dough ball between two sheets of parchment paper into a thin round, about 1/8 inch thick.

Step 6

Heat a large non-stick skillet over medium heat. Once hot, cook the flatbreads one at a time.

Step 7

Place a rolled-out flatbread onto the skillet and cook for 2-3 minutes on one side until bubbles start forming and the bottom is golden brown.

Step 8

Flip the flatbread and cook the other side for another 2 minutes until browned and cooked through.

Step 9

Remove from the skillet and place on a plate lined with kitchen towels or parchment paper. Repeat with the remaining flatbreads.

Step 10

Serve warm as a side dish or use as wraps for your favorite fillings.
